Asian Pear Bacon Chicken Salad

Ingredients:
2lb of cooked chicken diced
1 cup diced pear (or if you can have apples use apple)
1/2 cup mayo
1 tsp. Dijon mustard
1/2 cup bacon bits
1/4 cup fine diced red onion
1/4 cup celery
salt and pepper to taste
Instructions:
Combine all ingredients in a bowl and mix
Serve on bread with lettuce
Enjoy!

Cosmic Crisp Apple series! Cosmic Crisp had a recipe contest and we entered 3 different recipes to that contest. This is one of them. Allergy Girl can't have apples because she's allergic so we replaced the apples with Asian pears.
Salads like these are so great to have on hand because they're easy, can be used in several different ways, healthy, and delicious. You can plop this on top of a spring mix salad, put it in a sandwich, have it by it's self, or treat it as a dip and scoop it up with some chips or crackers. If you can have apples, by all means use them if you so desire because either way they are delicious.
