Best Mango Salsa

FREE OF: gluten, dairy, tomato, coconut, seeds, lime, fish, soy, cauliflower, nut option





Ingredients:


  • 2 lb diced frozen mango

  • 3 Tbsp lemon juice

  • 1 Tbsp. Sugar

  • 1 Tsp salt

  • 1 Red bell pepper diced

  • 1/2 cup red onion

  • 1/2 cup chopped cilantro


Instructions:


Dice mango, cilantro, onion

Combine all ingredients in a bowl




 


Story behind the recipe:

A previous roommate of the Chef worked at a place where they were having a salsa contest. The Chef asked her if she wanted to win the contest and she said, "yes!". He came up with this recipe for her and she brought it to work. Allergy girl didn't know the Chef yet, but at the time was best friends with his roommate and worked with her. She tried to make her own salsa, but it didn't quite stand up to her friend's salsa. She was in love with her friends salsa and begged for the recipe, but was unable to attain it.

Needless to say everyone was ALL about this salsa and she won the contest. She didn't know that her friend hadn't created the recipe. Allergy Girl had often thought of that salsa and missed it. One day a long while down the road, the Chef brought up a very similar sounding salsa, she probed him for more information, and to her excitement she found out it was him all along and the salsa was right at her fingertips this entire time.

This is one of her favorites because it is fresh, unique, and vibrant in taste. You can't find anything like this salsa anywhere else and its SO EASY to make. Also for those of you who are lime free like me, he adjusted the recipe to lemon, but if you can have lime... go for it. Its a rare thing to find a salsa that's tomato free and vibrant in taste.
