Blueberry White Crumble Muffins

FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, fish, cauliflower, peanut, hazelnut, apple,






Ingredients:


  • 1/2 cup gluten free oats

  • 1/2 cup of extra creamy almond milk (or milk of choice)

  • 1 egg

  • 1/3 cup sugar

  • 1/2 tsp vanilla

  • 1/2 cup frozen or fresh blueberries

  • 1/2 cup and 1 tbsp gluten free flour

  • 1 tbsp brewers yeast

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt


Crumble topping:

  • 1 tbsp vegan butter

  • 3 tbsp flour

  • 1 tbsp sugar

  • 1/4 cup powdered sugar

  • 1/2 tbsp almond milk (or milk of choice)




Instructions:


  1. Preheat oven to 375 degrees

  2. Use muffin liners or grease the muffin tins

  3. Combine the almond milk and oats in a bowl and let them soften for 5-10 minutes

  4. Add softened/melted butter, egg, sugar, and vanilla and combine

  5. Add the flour, flax,baking powder, baking soda, and salt and mix till well combined

  6. Add a scoop of batter to each muffin tin

  7. Mix the blueberries into the remaining batter and fill up the tins the rest of the way

  8. Crumble: place the butter in a small bowl, add flour, and sugars and mix till crumbly (you can use a pastry cutter or fork or whatever you'd like

  9. Sprinkle the muffin tins with the mixture

  10. Bake for about 15 minutes

  11. Let cool and enjoy!





 


Story behind the recipe:

These muffins are delicious, healthy, and unique. As some of you know, Allergy Girl just had their new little girl Lila. She was looking at ways to help feed their new cook-in-training and she searched through countless "lactation" recipes, only to find she wasn't fully enjoying any of them... so she made her own!

You obviously don't need to be lactating or even female to have these, but if you are, these are very effective and you'll be happy with the results. If you are not, it might help to know that the Chef fully approved of their deliciousness also. So you can rest knowing that though they may seem weird when looking at the ingredients they're as enjoyable as any normal muffin. Plus you get added nutritional value from these unusual ingredients. Side note... Aren't they also beautiful?!
