Cold Fighting Ramen
Serving size: 3-4
Prep Time: 5 minutes
Cook time: 20 minutes
FREE OF: gluten, dairy, tomato, coconut, seeds, fish, soy, cauliflower, nuts, vegan (option)
Ingredients:
Black rice ramen noodles 2 blocks
1 Chicken broth
1 stick chopped celery
Handful frozen peas and carrots
1 Tbsp. celery salt
1 Tsp parsley
1 Tsp oregano
1/2 Tbsp. Immunity broth packet
1 Tsp Chicken broth concentrate
1 Tsp minced ginger,
1 cup water
(Optional) add a pinch of cayenne
Instructions:
Bring chicken broth and water to boil
Add in chopped celery, spices, broth concentrate, and ginger
Boil for 5 minutes then add peas and carrots
Boil for another 5 minutes
Add in the ramen
Leave for 1 minute then use a fork to start stirring up the noodles and broth
Cook for 2 more minutes as you continue to separate the noodles and stir
Turn off heat and serve
Recommendations:
-You can absolutely make this vegan by just switching the broths to vegetable broths. Equally as yummy.
-Feel free to add more celery and for added nutritional and taste value you can add in celery leaves if you have them.
-You could also add more ginger if you love the taste of ginger.
-If you like more noodles than broth, add 1-2 more blocks.

Being pregnant. Morning sick. Fighting a cold. All while the Chef valiantly works 2 jobs to support them both, Allergy Girl had to search through ingredients in the house and find a quick way to make something that's safe for the baby and fights the cold too, but also is yummy enough to keep down. She had a craving for chicken noodle soup (without the chicken). She hasn't been able to eat any meat since the morning sickness hit so she'd had to find other ways of getting enough protein. She didn't want the Chickpea pasta, but she did have this new kind of noodles made from black rice.
For those of you who don't know, black rice has a lot of added nutrients compared to regular plain old rice. It has more antioxidants than blueberries, higher in protein and iron, it possess something called Anthocyanins which has high anti-inflammatory and anticancer properties and can fight against Chronic diseases. The benefits are endless and it's great to have on a regular basis if you can, but definitely the most helpful when you're sick. Plus it comes in these fun purple ramen noodles now!
Immunity broth packet doesn't need much explanation, but it includes so many benefits, way more benefits than regular "immunity" aids. It has beet and spinach which are high in iron, turmeric for anti-inflammatory benefits. The other spices Allergy Girl added take it even further. Oregano which is antibacterial and antiviral, ginger is also antibacterial and anti-inflammatory.
Carrots are high in vitamin c, peas are high in protein, broth is super important to help hydrate you while you're sick. Bottom line, you stand a great chance of gaining so much from this ramen. Plus if you're sick and already having chicken noodle soup, or maybe you get sick a lot, it's really nice to be able to mix things up and have something that's different but still holds the same benefits. You wouldn't think it would taste that much different, but it really does taste more like ramen. Hope you enjoy!
