Cookie Ice Cream Sandwiches

Prep Time: 25 minutes

Bake: 10 minutes

Freeze: 8 hours

FREE OF: gluten, dairy, soy, coconut, banana, seeds, citrus, fish, cauliflower, egg, canola

Ice Cream


  • 2 Cups Raw cashews

  • 1 Cup water

  • 4 Tbsp. Olive oil

  • 4 Tsp Vanilla extract

  • 1 Cup sugar


  1. Place all ingredients in the blender

  2. Blend until smooth and creamy

  3. Pour into freezer safe container

  4. Freeze for at least 8 hours

  • 2 1/4 cups all purpose GF flour (we use Bob's Red Mill)

  • 1 Tsp baking soda

  • 1 Cup dairy free butter (we used Earth Balance soy free)

  • 1 Tsp salt

  • 3/4 Cup granulated sugar

  • 3/4 Cup packed brown sugar

  • 1 Tsp vanilla extract

  • 2 large eggs

  • 1 1/3 cups semi-sweet chocolate chips


  1. Preheat oven to 375

  2. Combine flour, salt, and baking soda in a medium mixing bowl set aside

  3. In another bowl beat butter, brown sugar, granulated sugar, and vanilla until well combined

  4. Add eggs one at a time while mixing

  5. Gradually add flour mixture

  6. Add chocolate chips and chunks of cookie dough and stir up

  7. Using a 1oz scoop, portion heaping scoops onto a cookie sheet leaving a 1 inch gap between

  8. Bake between 9-11 minutes

  9. Place on cooling rack



  1. Put ice cream on one cookie and then put a top cookie (we just used an ice cream scooper, but if you want to soften up the ice cream and use a pipe bag that would work too).

  2. Individually wrap each sandwich in plastic wrap

  3. Place all cookies in a freezer safe zip lock bag

  4. Freeze for a few hours or overnight

  5. ENJOY!

If you read our Chocolate Chip Cookies Post you'll know we were talking about making cookie ice cream sandwiches, right? Here it is! We are amazed with how yummy these turned out.

We honestly believe this is our best ice cream version yet. So if you like these then you should definitely make a batch of the ice cream by it's self.
