Dairy Free GF Alfredo Chicken Parmesan

Serving size: 4-5

Cook time: 2 hours


FREE OF: gluten, dairy, tomato, coconut, seeds, fish, soy, cauliflower




Alfredo Sauce


Ingredients:


  • 4 Cups cashew milk

  • 1 8oz cream cheese (we use Kitehill)

  • 1 Cup Follow Your Heart parmesan

  • 1 1/2 Cup Follow Your Heart Mozzarella

  • 1 Tsp salt

  • 1/4 Tsp pepper

  • 1/3 Cup rice flour

  • 1/4 Cup canola oil


Instructions:


Put cashew milk into medium sauce pan and bring to boil

Once the milk boils add the cream cheese, parmesan, and mozzarella to pan and stir till melted

Mix the rice flour and oil

Add mixture to pan and cook till it reaches your desired consistency




 


Chicken Breast Breading



Ingredients:

  • 6 oz. GF Panko breadcrumbs

  • 1 Tbsp. Follow Your Heart Parmesan

  • 1 Tbsp. Follow Your Heart Mozzarella

  • 1/8 Tsp pepper

  • 1/4 Tsp salt

  • 1/4 Tsp garlic

  • 1 Tsp Italian seasoning

  • 3 large eggs

  • 2 Tbsp. water

  • 2 Cups rice flour




Breading Instructions:


Mix together bread crumbs, mozzarella, parmesan, salt, pepper, garlic powder, and Italian seasoning in a large bowl

In separate bowl combine eggs and water

Beat the eggs

Put flour on a plate

Bread the chicken one at a time

First dip in flour, then egg wash then breading mix


Cooking Instructions:


Preheat oven to 400

Fill a large frying pan halfway with oil

Put it on high heat until it reaches at least 300

Once the oil is hot put in the chicken in the oil and cook until there is no more pink in center of chicken and breading is golden brown

Cover cooked chicken with sauce and top with a pinch of mozzarella

Place in oven and cook till cheese melts

Plate with past and enjoy!


 

Pasta


Ingredients:


  • 1/2 Cup Follow You Heart parmesan

  • 1/2 Cup Italian parsley

  • 2 Tbsp. fresh garlic

  • 1 Tbsp. Italian seasoning

  • 6 Tbsp. butter alternative (we use Melt)

  • 4 Tbsp. garlic oil

  • 1/2 Tbsp. onion powder

  • 1/2 Tbsp. Salt

  • 2 packages Spaghetti



Instructions:


Chop up the fresh Italian parsley and set aside

Start boiling a large pot of water

Once water boils put in the 2 packages of pasta

Cook for about 6-8 minutes and then drain (you want your pasta to be underdone)

Turn the burner on low-medium heat

Add 2 Tbsp. butter and garlic, let simmer for a bit

Add in 2 Tbsp. butter, let melt

Now add all ingredients except Italian parsley and mix around until pasta is well done

Turn off burner, add Italian parsley and mix


 


Story behind the recipe:


Allergy Girl had planned to make this for them as a special treat because she had been working a lot and hadn't cooked for the Chef in a while. What started as a sweet gesture turned into a funny and adorable misunderstanding. She had told him she was going to make it for dinner, they went shopping, came back, and he excitedly started prepping. He pretty much took over the project, and he seemed so excited about it that Allergy Girl just let him do his thing.

She started to feel a little bummed out because she was really excited to make him something special that she knew she could make. She only knew how to make two fancy meals (at least ones she knew he would enjoy), this was one of them. She was secretly hoping that she could impress him this one, but now one out of two was gone from the options. He noticed she seemed a little down, and so she told him what happened. He felt so bad about it and offered for her to take over, but she saw how excited he had been to make it and wouldn't dream of taking that away from him. She asked if she could just make the pasta because she had a new idea she wanted to try, and he happily agreed.

They made this meal as a team, and enjoyed it as a special dinner. So maybe you make this as a team with your family or loved one. Some things are better done together, and we believe this is one of them. Whoever likes to get messy should be in charge of coating the chicken, the person who wants an easy job in charge of the pasta, and we recommend you put the bravest person on frying the chicken... or maybe designate a person to provide a shield to whoever is frying it because... watch out. ;) If you're cooking it alone or no one is brave in your group, YOU GOT THIS!
