French Toast Casserole GF Dairy Free

Casserole
Ingredients:
1 bread loaf (we highly recommend Canyon Bakehouse Hawaiian bread)
5 large eggs
1 1/2 Cup Silk caramel almond milk creamer
2 Tbsp sugar
Zest from a lemon
1/2 Tsp cinnamon
1 Cup frozen blueberries
Instructions:
Turn oven on 375 degrees
Chop bread into small pieces
Combine all ingredients in a bowl and toss till all bread is soaked, leave in bowl
Topping
Ingredients:
1 Packet of Shar gram crackers
1 Tsp cinnamon
8 Tbsp unsalted butter (we use Country Crocker olive oil dairy free)
4 Tbsp brown sugar
Kite Hill dairy free cream cheese
Instructions:
Melt butter in a small bowl
Crushed gram crackers
Add all ingredients except cream cheese and mix
Put the casserole in a casserole dish
Pour the topping over it
Scoop out small pieces of cream cheese and place throughout the casserole on top (we did about half of a Kite Hill cream cheese container)
Put in oven and bake for 35 minutes
Recommendation
Highly recommend making a berry compote to put on top of it. This casserole is very sweet and creamy, a nice berry sauce with low sugar is the perfect pair. On the side, we like to have sausages, maple sausages are the Allergy Girls favorite, but regular are the Chef's favorite so you choose. Want to make it ahead? Go for it! It's even better cold too! Story behind the recipe:
Allergy girl discovered a recipe a lot time ago that she really wanted to make and as she was making it she realized little by little that she didn't have the ingredients and needed to improvise. She didn't have milk of any kind, all she had was creamer so she used that. She didn't have regular bread so she used Hawaiian. She didn't have enough cinnamon so she used gram cracker. She had a real craving for cream cheese, so she put that in there too. She never wrote down the recipe, and later when she wanted it, had to mess around with it to figure it out. Low and behold, here it is.
If you like a lot of cream cheese, Allergy Girl recommends premixing the cream cheese with some sugar to balance out the saltiness. The casserole by it self can be a bit sweet for some people so it's super important for those less sweet loving people that you give them the option to balance it out with some berry compote. Allergy girl likes a berry mix, blackberries, raspberries, blueberries, and strawberries, but tart berry will do. It's always a good idea to strain your compote afterwards to get rid of seeds if you don't like seeds. We hope you enjoy it and have a lovely morning!
