GF Dairy free Chocolate Chip Cookie Dough Ice Cream

FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, fish, cauliflower, egg
Ingredients:
2 Cups Raw cashews
1 Cup water
4 Tbsp. Olive oil or canola oil
4 Tsp Vanilla extract
1 Cup sugar
1/3 Cup chocolate chips (dark chocolate)
1 Cup cookie dough of choice (we used Sweet Lauren's cookie dough)
Instructions:
Put everything but the cookie dough and chocolate chips into a Vitamix or blender
Blend till smooth
Pour into freezer safe container
Add chocolate chips and chunks of cookie dough and stir up
Let freeze for 8 hours (I know, we wish it was sooner too)
Story behind the recipe:
If you have all the allergies that Allergy Girl has. I'm sure you've been on the hunt for an ice cream you can have, right? ALL of them have coconut! It's insane. Whether its coconut oil or coconut milk/cream it's in all of them except an avocado one, but Allergy girl doesn't like avocado so it doesn't satisfy the craving. Now sure, you can settle for making banana ice cream or almond milk ice cream, but it's all icy like a popsicle and lacks the creamy rich texture that makes ice cream so special; plus you have to invest all this effort and time into something you're not even happy with.
You feel like you're just eating a sorbet, right? Which forces you to have to go to your concentrated happy introverted place in your brain to pretend you're eating ice cream, and begin an inner mantra that's constantly interrupted by your inner child that's having a fit which goes something like this... 'focus on the flavor, not the texture... at least you get to have something... BUT IT DOESN'T FEEL LIKE ICE CREAM IT MAKES MY SOUL SAD... No no no it's not that bad remember flavor... THE FLAVOR ISN'T GOOD EITHER NOW WHAT, SMARTY... It's better than nothing, okay? WHA-EVER.' Okay, maybe yours doesn't go exactly like that, but it's similar, right?
The Chef went on countless trips to every story everywhere with Allergy Girl to see if any place had it; months of searching all over the place including Oregon and Alturas. Allergy Girl was so dejected after a while that the Chef insisted she no longer look and he would just always look for her so she didn't have her heart broken after reading label after label. He made it his mission to create ice cream, after he realized there's nothing out there. He tried countless mixtures.
The attempt he made before this one is actually a funny story. He had mixed together two recipes he found, one of which had garlic. He assumed that the garlic maybe had something to do with the flavor of the creaminess. He made the ice cream and tried it before he froze it only to find out all he could taste was raw garlic (yuck!). He tried to cover it up with chocolate and Oreos. After it was done freezing they were so excited to try it because the texture was PERFECT. Allergy Girl about had a fit with excitement and danced around singing his praises, however, when they tried it... well, not so happy of an ending. Basically it was uneatable unless maybe you were an avid garlic obsessed connoisseur. They threw it away with some disappointment, but had hopes for the next batch WITHOUT the garlic.
Low and behold, the next batch was a master creation. Allergy Girl called the Chef magical and did a dance of happiness fit for a spazoid. It was a happy ever after, a huge win for food allergy challenged individuals all over. We hope you find this a win as well and enjoy it as much as us.
