Healthy Salmon Dinner

FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, shell fish, cauliflower, nuts





Salmon



Ingredients:


  • 2 medium/large Salmon fillets

  • 1 tsp minced garlic

  • 1 Tbsp dairy free butter (we used Earth Balance soy free)

  • 1/2 tsp salt

  • 1 tsp thyme

  • 2 Tbsp lemon juice

  • 1 tsp parsley (dried or fresh)

  • 1 tsp honey (optional, totally delicious without it still)





Instructions:


  1. Preheat oven to 400

  2. Place salmon on top of some foil thats big enough to full wrap around and cover them

  3. Coat the salmon in all the other ingredients

  4. Cover the salmon up tightly, add another layer of foil to wrap around (you really want it to steam)

  5. Bake for 13 minutes or until cooked (cook the other side dishes while you do this)




 

Rice



Ingredients:


  • 2 cups Instant white rice

  • 1 tsp parsley (fresh or dried)

  • 1 tsp paprika

  • 1 tsp lemon juice

  • lemon wedge

  • 1 Tbsp nutritional yeast

  • 1 tsp salt

  • 1 tsp pepper





Instructions:


  1. Boil 2 cups water

  2. Put all ingredients in and stir

  3. Turn off heat and cover with a lid (cook other side dish while you wait)




 


Green Beans




Ingredients:


  • 1 large bag of green beans

  • 1 Tbsp all seasoning

  • 3 Tbsp olive oil

  • 1 Tbsp garlic & herb seasoning

  • 1 tsp onion powder





Instructions:


  1. Heat up oil in a large pan on high heat

  2. Put in green beans

  3. Add all the seasonings

  4. Stir them around, keep doing that every 3 minutes until you're satisfied with the amount of browned green beans

  5. Lower heat, add in around 4 tbsp of water and cover till they are tender or until they reach your desired doneness

  6. Now put all of your dishes on your plate... we like the salmon on top of the rice and you can use some of that butter sauce in the foil packet to drizzle over the salmon and rice

  7. Add some more fresh squeezed lemon on to that salmon (or serve a lemon wedge on the side for guests)

Salmon is delicious and it's so healthy! These two side dishes to go with it are the perfect way to complete a healthy plate that is sure to satisfy your tummy and your taste buds. Pretty easy and quick dinner that you can throw together for the family or yourself and have left overs!

Ever been to Tea Bar? They have a salmon bowl and their salmon is so perfect in taste and texture it just keeps you craving salmon even after you have it. That's what happened to Allergy Girl here. More salmon please! Now don't get your hopes up, this isn't a copy cat of their salmon, but it (seriously who knows what voodoo stuff they do to that perfection of a fish) but it is something to satisfy your salmon craving in a different way.
