Ice Cream Oreo Cake

Freeze: 5 hours


FREE OF: gluten, dairy, soy, coconut, banana, seeds, citrus, fish, cauliflower, egg, canola (option), animal product free (aka vegan).





Ice Cream


Ingredients:


  • 1.5 Cups Raw cashews

  • 1 Cup nut milk (we use creamy almond or cashew)

  • 4 Tbsp. canola oil (or olive oil if you need to)

  • 4 Tsp Vanilla extract

  • 1 Cup sugar

  • 5 gluten free Oreos



Instructions:


  1. Place all ingredients in the blender

  2. Blend until your blender starts to feel warm

  3. Add in 5 oreo's and blend quickly

  4. Place plastic wrap/saran wrap in a 8 by 8 baking pan

  5. Pour the mixture into the saran wrap

  6. Freeze for at least 3-4 hours

  7. NOTE: If you need that same pan for baking the cake you can remove the ice cream with the saran wrap and leave it in the freezer by it's self once it's frozen enough, but be sure to place it on a flat surface in the freezer





 

Cake & Assembly


Ingredients:


  • Chocolate Cake mix and all ingredients it requires(we use Bob's Red Mill)

  • Vegan Cool Whip (we use vegan TruWhip)

  • Gluten free Oreo's (half a pack)



Instructions:


  1. Follow the instructions for your chocolate cake, but split the cake mix into two baking pans (we did 8"8, you can use whatever size but it has to match the size of the ice cream)

  2. Let cakes cool

  3. Place one cake on a large plate

  4. Place the ice cream on top of that cake

  5. Crush up 5 or so oreo's and sprinkle them on top of the ice cream

  6. Put the second layer of cake on top of that

  7. Smear on some Cool Whip with a spatula as thick as you'd like it

  8. Crush as many oreo's as you'd like and sprinkle them on top



 



Story behind the recipe:

The Chef's favorite dessert is ice cream oreo cake. Allergy Girl wanted to make it as a surprise for him for their anniversary. She looked at regular recipes online, but none looked like they were staying authentic to the classic name brand Oreo cake so she tried to do it from memory. Doing it from memory was a challenge because she hadn't had it since she was a little girl before she found out she had all these allergies.

Honestly this cake is very simple to make and doesn't require much effort. After you make it, you'll think about how it's no big deal and you wouldn't mind making it again. It's absolutely delicious!
