Ice Cream White Oreo Cheesecake

Vanilla Ice Cream
Ingredients:
2 Cups Raw cashews
1 Cup water
4 Tbsp. Olive oil
4 Tsp Vanilla extract
1 Cup sugar
Instructions:
Place all ingredients in the blender
Blend until smooth and creamy
Pour into freezer safe container
Freeze for at least 8 hours
Crust
Ingredients:
White Oreos
Instructions:
For each cheesecake, grind up a row of Oreos in the food process
Push the Oreos on the bottom of the pan
Cheesecake Filling
Ingredients:
1 cup sugar
3 8oz package of cream cheese (we love Kitehill)
4 large eggs at room temperature
2 Tsp vanilla
1/2 cup macadamia milk
Instructions:
Turn oven on 325
Put cream cheese in stand mixer (or use hand mixer)
Mix in stand mixer for 10 seconds on low
Increase speed to medium
Add sugar slowly
Scrape sides
Add eggs 2 at a time
Scrape again
Add vanilla and salt
Blend on low
Slowly add macadamia milk
Blend on medium until well combined
Scrape bowl to make sure all is mixed
Once crust is cool put filling in crust
Wrap pan in foil
Put in roasting pan and carefully add water till halfway up the pan
Bake for about 45 minutes
Turn oven off
Crack open the oven with a wooden spoon and leave it there for 1 hour
Remove from roasting pan and foil and put on a wire rack at room temperature for 2 hours
Refrigerate for at least 3 hours but best at 24 hours
Alternatives:
You can use any kind of milk you desire. If you're looking for a good alternative to nut milks, we suggest gluten free oat milk. You can also use: soy, hemp, rice. For the cream cheese, they have all soy cream cheese you can use.

Story behind the recipe:
Little Ms. Lila (who's still growing and living in Allergy Girl) refuses to let her momma eat chocolate. Being it was Valentines day and Allergy Girl had a fierce craving for cheesecake, she suggested they make a cheesecake with white Oreos. She wanted The Chef to have his favorite dessert too (Oreo ice cream cake) so she had the idea to make it an ice cream Oreo cheesecake!
Now full disclosure. This is not a quick recipe to make. This is one of those desserts you make for a special occasion or because you're up for the challenge or you're having a fierce craving. It's some what an all day process, not that you're actively participating the whole time, but you do need to regularly check and complete steps. Don't be scared off though! It's SO BEYOND WORTH IT and you'll wish you had it all the time.
