Pesto Pizza and Salad

Cook time:8-10 minutes



Pesto

2 cups light packed basil

1/2 cup of olive oil

6 cloves of garlic

pinch of salt


Instructions:

  1. Combine all ingredients in a food processor

  2. Process until the mixture is smooth

  3. Spread over pizza crust



 

Pizza:

Shcar pizza crust (follow cooking instructions)

4oz of piece of my heart vegan mozzarella cheese

sprinkle of piece of my heart vegan cheddar cheese

peperoni

artichoke heart

olives

yellow bell pepper

pepperoncini


 

Salad

Half pound of spring mix

1/2 cup of cranberry

1 cup glazed walnuts

1/2 of a red onion julienned

1/2 cup canola oil

1/3 cup white vinegar

1 tsp salt

1tsp granulated garlic

1tsp pepper

1/2 block of the Myoko Smoked Farm House Cheese shredded


Instructions:

  1. Combine all ingredients in a bowl

  2. Toss until evenly coated

 

Story behind the recipe:

One night Allergy Girl REALLY wanted pizza. She hadn't had pizza in a couple years because she couldn't figure out how to make something good without tomatoes, and dairy. She had hinted at it several times, and pined at pizza whenever it came in our path. So I decided I needed to fix that. I make a really good pesto sauce that I already knew she liked and made that my first spark of inspiration for the recipe.

There's this amazing salad I made for a work party once and I really wanted to make that for her and the only real part of it I struggled with was the cheese. I had recently found Myokos Smoked Farm House dairy free Cheese in her freezer and found out it was her favorite "cheese" but she never did anything with it, so I took that, shredded it, and added it in place of my regular cheese. I prefer this version over the regular version because that "cheese" does something magical to the recipe.

It's a rich salad with a hearty pizza. It makes the perfect date night dinner or cozy comfort food for anyone. We have this regularly and have come up with many versions of it that we will post later because it's so delicious it's quite honestly addicting. Allergy Girl requests this all the time and glows with happiness when we have it. We hope you enjoy it as much as we do! Let us know how it goes.
