Peanut Butter Cookies

Serving size: 6-12
Prep Time: 15 minutes
Bake: 10 minutes
FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, fish, cauliflower
Ingredients:
2 1/2 cups all purpose GF flour (we use Bob's Red Mill)
1 1/2 Tsp baking soda
1 Cup dairy free butter (we used Earth Balance soy free)
1/2 Tsp salt
1 Cup granulated sugar
1 Cup packed brown sugar
1 Tsp vanilla extract
2 large eggs
1 Cup Peanut butter
Instructions:
Preheat oven to 375
Cream butter, peanut butter, and sugars together
Add eggs one at a time
In separate bowl, mix together the rest of the ingredients
Mix it all together until well combined
Scoop into 1 ounce balls on a greased pan
Flatten out with a fork
Bake for 10 minutes
Place on cooling rack

Our wedding is coming up soon and instead of doing a cake, we're doing cookies. We're both cookie fans and we wanted to make our own cookies because we can trust the ingredients and it's way cheaper to just make your own. I mean seriously, have you seen how much the good GF dairy free cookies cost? So we came up with our chocolate chip one which you've already seen and then peanut butter, and then... ha! I had you. You thought I was gonna give away the next flavor, didn't you? Why would I spoil the surprise?! You're just gonna have to stay tuned and find out there, sugar plum.
All silliness aside, we are super excited about all our cookies. They're all the soft chewy kind, the kind that makes you feel all cozy and special. We've packed good flavor into them and they make a great treat for anyone to enjoy. Plus, as always, they're super quick and easy to make.
