Pear Bacon Brandy Chicken

FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, fish, cauliflower, peanut, hazelnut, apples



Ingredients:


  • 3 Chicken breasts

  • 1/2 cup bacon bits

  • 1/2 cup Miyoko's smoked Farmhouse cheese

  • 1 Asian pear

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 cup brandy

  • 2 Tbsp. brown sugar

  • 6 Tbsp cold butter slices

  • 2 Tbsp olive oil




Instructions:


  1. Preheat oven to 450 degrees

  2. Butterfly the chicken breasts

  3. Stuff chicken with cheese, pear, and bacon

  4. Season chicken breasts on top and bottom

  5. Place oil in skillet on high heat

  6. Once hot, add chicken and sear on both sides

  7. Once seared, place in oven for 12-15 minutes or until internal temp is 165 degrees

  8. Remove pan from the oven and remove chicken from the pan

  9. Place the pan back on high heat and add brandy

  10. Once it starts to bubble add brown sugar and let reduce

  11. Once reduced turn to medium-low heat and add butter

  12. Stir constantly until butter is melted

  13. Top chicken with sauce





 


Story behind the recipe:

Classy, fancy, and delicious... obviously. The Chef came up with this one in inspiration of the Cosmic Crisp Apple contest that the blog entered into. He loves stuffed chicken and it's one of his go-to recipes, but this time he wanted something different than the norm.

It all started with Brandy... What goes well with brandy? Apples and cheese. However, Allergy Girl can't have apples so the best alternative was Asian Pears. Now if you can have apples and want them, by all means do the apple version. If you're looking for something more unique, or you're feeling adventurous, or you can't have apples, then definitely try the Asian Pear version.

This recipe required something more rich than basic cheddar or mozzarella cheese, and Miyokos farmhouse wheel cheese was the perfect fit. Strong and rich in flavor, but still complimented each of the ingredients in this delux recipe. If you can't find this cheese near you, then just use the strongest and riches cheese alternative you can find; preferably one with a smokey flavor.
