Story Behind the Recipe
Pot Roast is a classic for fall weather. Hearty, packed with flavor, and super easy. With this recipe it's pretty much just throwing everything in together and then you just have to wait it out.
It's easy to underestimate how delicious this dish is because it's so simple, but once you make it you just can't get enough of it. This is a great recipe for family night, a dinner party, or you can make this for 1-2 and just have leftovers. It's just as good leftover. If you have enough juices left at the bottom you could easily make it into a gravy and pour it over everything. Often times the juices will be thick enough themselves that you won't need to turn it into a gravy. If that happens, just give everything a good toss over or spoon the juices over your bowl of goodness.
