Strawberry Oatmeal Cookies

FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, fish, cauliflower, peanut, hazelnut
Ingredients:
1 1/2 cups all purpose GF flour (we use Bob's Red Mill)
1 Tsp baking soda
1 Cup dairy free butter (we used Earth Balance soy free)
1/2 Tsp salt
1/3 Cup granulated sugar
1 Cup packed brown sugar
1 Tbsp. vanilla extract
2 large eggs
3 Cups oats
1 heaping Cup chopped strawberries (fresh or frozen)
1 Tsp. Almond extract
(optional for extra strawberry flavor: 1 Tsp strawberry extract)
Instructions:
Preheat oven to 350
Beat butter and sugar together
Add eggs one at a time
Add vanilla, almond extract, and strawberry (if adding)
In separate bowl, mix together flour, baking soda, salt
Add dry mixture to wet mixture
Add in oats and strawberries one cup at a time
Scoop into 1 ounce balls on a greased pan, leave 2inches in-between
Bake for 12 minutes
Place on cooling rack

Story behind the recipe:
When you have people over or kids over its always nice to have a tasty treat to serve everyone. Often when you have company you are rushed for time and need something quick, this is a good one to have on hand. It's allergy friendly so it's safe for pretty much anyone, they're healthy other than the sugar, and they're unique.
Oatmeal raisin are the go to (which we also have here: (link) )or cranberry oatmeal, but no one every makes strawberry oatmeal; so you get that unique edge that surprises people a little. It's also really difficult to find a child that doesn't like strawberry, right? However, if you're just having a girls coffee date (the whole reason Allergy Girl came up with the recipe), or an adult-get-together, these go well with any coffee drink and they will be enjoyed just the same.
Tip: you can always make these the day before and then pop them in the oven really quick for 2-3 minutes right before your guests come to make them seem freshly baked as well as make your house smell divine for your guests or yourself.
