Tater Tot Casserole

Serving size: 3-4


Prep Time: 15


Bake time: (however long the tater tots say, usually 20 minutes)


FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, fish, cauliflower, peanut, tomato





Ingredients:


  • 2lb ground beef

  • 2 cans corn

  • 2 cans greenbeans

  • 2 cups cashew milk

  • 8oz Follow Your Heart mozzarella

  • 8oz Follow Your Heart Parmesan

  • 8oz dairy free sour cream

  • 1 bag tater tots

  • 1 tsp. garlic

  • 1 tsp. pepper

  • 1 tsp salt



Instructions:


  1. Set oven to whatever temperature your tater tots say

  2. Cook ground beef

  3. Add seasonings, cheeses and sour cream cook till melty

  4. Add corn and green beans

  5. Mix around then pour into a large casserole dish

  6. Cover the top evenly with tater tots

  7. Bake for however long the tater tot instructions say

  8. Enjoy!



 


Story behind the recipe:

There isn't much to this story other than looking for a delicious simple recipe that makes a lot of food. Everyone needs easy recipes that you can make quickly in large quantities and this happens to be one. So long as you have more casserole dishes, or one really large one you can always increase the recipe to however many people you need.

Perfect for meal prep, a big family, or a family gathering event. The Chef and Allergy Girl made this for their rehearsal dinner and paired it with an easy salad on the side. Two of these babies and the salad fed around 30 people with room for seconds. It's a big hit, even for those who aren't allergy ridden (most of the 30 people had no food allergies and absolutely loved this).
