The Best GF Dairy Free Cookies!

Bake: 10 minutes


FREE OF: gluten, dairy, soy, coconut, banana, seeds, lime, fish, cauliflower, egg





Ingredients:


  • 2 1/4 cups all purpose GF flour (we use Bob's Red Mill)

  • 1 Tsp baking soda

  • 1 Cup dairy free butter (we used Earth Balance soy free)

  • 1 Tsp salt

  • 3/4 Cup granulated sugar

  • 3/4 Cup packed brown sugar

  • 1 Tsp vanilla extract

  • 2 large eggs

  • 1 1/3 cups semi-sweet chocolate chips


Instructions:


  1. Preheat oven to 375

  2. Combine flour, salt, and baking soda in a medium mixing bowl set aside

  3. In another bowl beat butter, brown sugar, granulated sugar, and vanilla until well combined

  4. Add eggs one at a time while mixing

  5. Gradually add flour mixture

  6. Add chocolate chips and chunks of cookie dough and stir up

  7. Using a 1oz scoop, portion heaping scoops onto a cookie sheet leaving a 1 inch gap between

  8. Bake between 9-11 minutes

  9. Place on cooling rack

Story behind the recipe:

So you have a great surprise coming your way, but we're gonna tell you the secret early... We made these cookies for (drum roll please...) ice cream cookie sandwiches! The recipe will be released soon, if you're reading this a while later though, you can just go to our "dessert" section and find the recipe! If you're allergy to dairy, and coconut we're certain you either haven't found any options or you have very little options available. We're here to save the day.

These cookies are so good that our gluten an dairy eating friends couldn't tell that they weren't a regular cookie. We told them nothing other than "try this cookie", and after they ate them they were amazed to find out that they were allergy friendly! They taste just like Nestle Toll House cookies (hard to believe, we know). Give it a try and tell us what you think!
