Valentine's Strawberry Oreo Cupcakes
Serving size: 18 cupcakes
Prep Time: 25 minutes
Bake time: 18 minutes
Decorating time: 15 minutes
FREE OF: gluten, dairy, coconut, seeds, peanut, animal products (except eggs)
Cupcake
Ingredients:
1 bag Bob's Red Mill Gluten Free Vanilla Cake Mix
Butter
3 Eggs
Water
Gluten Free Oreos
Instructions:
Follow the directions on the back of the cake mix for the cupcake version
Get out one small bowl, and a large Ziploc
Start separating the Oreos putting the filling in the bowl and the cookies in the Ziploc
Keep doing that until you have completed one full row of Oreos
Crush the cookies in the bag with a mallet or whatever floats your boat
Pour crumbs into the cake mixture
Fold in the crumbs till well combined
Put the mixture into cupcake pan lined with cupcake liners
Bake
Let cool to room temp
Cut out the middle of the cupcake, about half inch deep and a little less than half inch wide
Set 4 of the middles aside in a small bowl (snack on the rest)
Filling
Ingredients:
Oreo Filling (from the small bowl earlier)
4 Cupcake middles
2 Tbsp. almond milk
1/2 tsp. strawberry flavor (we used natural)
Instructions:
In a small bowl mix together all the ingredients with a hand mixer
If you like your filling a little more moist feel free to add more almond milk
Use a small spoon to scoop up the mixture and fill the middle of the cupcakes

Heart Frosting and Decor
Ingredients:
1 can Pillsbury vanilla frosting
Natural red food coloring or 1/2 cup frozen strawberries
Dark Chocolate chips
Fresh Strawberries
Pipe bag, medium round nosel, and mini round nosel
Instructions:
Mix the frosting and food coloring until you get the color you like, pink or red- up to you, or you can heat up 1/2cup frozen strawberries and use a fine strainer to push all the juices into the frosting and use a hand mixer to whip it up for 3 minutes
Melt chocolate
Slice fresh strawberries in half
Dip the top of the cupcake in chocolate covering the whole top
Grab a strawberry and dip it half way then place on the right top side of the cupcake
Repeat till all cupcakes are complete, let chocolate harden
Put frosting in pipe bag and pipe the frosting into a heart shape next to the strawberry
Put the cupcakes in the freezer for about 15 minutes
Take cupcakes out of the freezer one at a time
In a small pipe bag put a small amount of melted chocolate (should be left over from earlier and slightly cooler by now)
Make sure you have a paper towel under the tip of the nosel so chocolate doesn't go everywhere and keep it more at an up right angle
VERY carefully pipe a small heart on the frosting heart, you don't have to squeeze the bag it should come out in a flow the second its pointed downward
Repeat the process with the rest of the cupcakes till they're all done

This is SUCH a FUN project! Often on Valentine's day you want to go all out and make something really special, right? But then you spend so many hours trying to do that, and by the time you're done you're most likely frustrated and unhappy with the result, not to mention tired, right? Well this one doesn't require you to do that, but you still get an impressive, special, tasty, unique result.
This is designed to make your life easier, and make you feel like you get special treats like everyone else. You literally cannot say you got this at a store because no one carries allergy friendly treats like this. The cupcake is a pre-made mix, the frosting is already done, you really have minimal effort and the effort you do have to put in is pretty much all the fun stuff. However, you still put in enough effort for it to be something special.
It's even more of a fun project with a friend or your loved one. Put on some music, or a romantic/inspiring movie/show, take pictures and videos of your fun experience, and just HAVE FUN.
