Veggie Salmon Pesto with Balsamic Parm Polenta

Serving size: 4-5 servings


Prep Time: 8 minutes


Cook time: 20 minutes



FREE OF: gluten, dairy, soy, nuts, coconut, banana, seeds, lime, shell fish, cauliflower, tomato




Ingredients:


  • 3 green zucchinis chopped

  • 3 large carrots chopped

  • 1 large yellow onion chopped

  • 2 large yellow zucchinis choppped

  • 1 salmon fillet

  • 4 Tbsp dried basil

  • 4-6 Tbsp olive oil

  • 1/2 Tbsp fresh or powdered garlic

  • 1 Polenta roll sliced into 8-10 peices

  • 4 Tbsp balsamic reduction

  • Dairy free Parmesan (we use Follow Your Heart)

  • Flaky sea salt






Instructions:


  1. Put a large skillet on medium heat with some olive oil

  2. Put in onion and carrots

  3. Let cook for about 5 minutes (add a 1/3 cup water just to steam the carrots into cooking faster)

  4. Add in the salmon, zucchini, garlic, and basil

  5. Cover with a lid for 10 minutes

  6. Put small pan on medium/high heat with olive oil and one Tbsp balsamic

  7. Lay your polenta down 4 at a time

  8. Once dark golden, flip, add more olive oil, balsamic, and sprinkle with parmesan

  9. Repeat till all polenta are cooked

  10. Take lid off veggies and salmon, use a wooden spoon to flake/chop up the salmon so it mixes into the rest of the veggies

  11. Cover and let cook for another 5 min or until salmon and zucchini are cooked through

  12. In a bowl, place the veggie salmon mixture in first, then layer 2-3 polenta on top

  13. Enjoy!





 


Story behind the recipe:

Sometimes you just want pesto, but you don't wanna go buy it and you definitely don't wanna make it. This is the laziest version of "pesto" you could ever create, but it tastes just as good. Super easy dinner, healthy, and tasty.

For those of you who like to separate your food, do yourself a favor and don't on this one. The veggie/salmon mix and the polenta are made to be eaten and mixed together. It completes the layer of flavors that make it taste so special. Slap that polenta on top! Just do it! You'll love it.

Enjoy by it's self or go full Italian and have some wine with it to feel all fanciful and romanced by your food. Though you'll probably feel romanced anyways without the alcohol. Hope you enjoy! Be sure to leave a review (that star tab you see on the left side of your screen).
